I love sardines but no picky kid is going to eat that. You'd be hard pressed with tuna even. That said, I have had success with a tuna pasta casserole.
Also baked mac n cheese is great. My kids also like ravioli, tortellini, and gnocchi to mix up the pasta types. You can make "pesto" from anything green really (spinach, kale, etc) food processed with some olive oil, parmesan, salt, garlic). Or do a pasta fagioli (with beans). Make some pasta, use some beans (navy, cannellini, etc) with some veggie or chicken broth and chopped celery and carrots or diced potato. The starchy potato & beans make a type of sauce. My kid is allergic to sesame but we do cold peanut noodles in summer. Sauce is peanut butter cooked a little with soy sauce, Sriracha, and a little honey. I water it down a bit with pasta water. Mix and add grated carrot and cucumber to serve. (This was a college roommate's recipe and I still like it!)
Pasta with lemon ricotta sauce and spring veggies (asparagus, peas etc) was a hit a few years back. Variations on "country style rigatoni" from Carmine's - sauce has parmesan, broken down cannelini beans, broccoli or broccoli rabe, and sausage. Recipe calls for prosciutto as well but we've dropped it and doubled the beans instead. Lo mein style stir fried noodles with cabbage, carrots, and green onions. |
